Ingredients

2 lbs ripe tomatoes, halved

1 medium red onion, quartered

4 cloves garlic, unpeeled

3 tablespoons olive oil

Salt and black pepper, to taste

2 cups vegetable broth

1 cup heavy cream (or coconut cream for a vegan option)

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Fresh basil leaves, for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Vegetables: Place the halved tomatoes, quartered red onion, and unpeeled garlic cloves on a large baking sheet.

Season and Roast: Drizzle olive oil over the vegetables and sprinkle with salt and black pepper. Toss everything to coat, then spread them out evenly on the baking sheet. Roast in the preheated oven for about 30-35 minutes, or until the tomatoes are blistered and caramelized.

Blend the Soup: Once roasted, let the vegetables cool slightly. Squeeze the roasted garlic cloves from their skins into a blender along with the tomatoes and onions.

Add Broth and Cream: Pour in the vegetable broth, heavy cream, dried basil, and red pepper flakes (if using). Blend until you achieve a smooth and creamy consistency. You might need to do this in batches, depending on the size of your blender.

Heat and Season: Pour the blended soup into a pot and heat over medium heat. Taste and adjust seasoning if necessary. Allow it to simmer for about 5-10 minutes to combine the flavors.

Serve: Ladle the creamy soup into bowls and garnish with fresh basil leaves. Enjoy with crusty bread or grilled cheese sandwiches for a comforting meal!
