1 head of garlic

2 tablespoons olive oil

1 cup cooked chickpeas (canned or freshly cooked)

1/2 cup tahini

1/4 cup fresh lemon juice

1/4 cup water (more as needed)

1 teaspoon ground cumin

Salt and pepper to taste

1/4 teaspoon cayenne pepper (optional, for a bit of heat)

1/3 cup grated Parmesan cheese (optional for a cheesy flavor)

Fresh parsley or basil, chopped (for garnish)

Cherry tomatoes, halved (optional for added freshness)

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves, drizzle with 1 tablespoon of olive oil, and wrap it in aluminum foil. Roast in the oven for about 30-35 minutes, or until the cloves are soft and caramelized. Let cool slightly, then squeeze the roasted garlic out of the skins into a bowl.

    Cook the Pasta: While the garlic is roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set it aside.

      Make the Hummus Sauce: In a food processor, combine the roasted garlic cloves, cooked chickpeas, tahini, lemon juice, and ground cumin. Pulse until blended. Gradually add in water until reaching a smooth, creamy consistency. Season with salt, pepper, and cayenne pepper (if using) to taste.
