1 cup coconut milk (full-fat for creaminess)

1 cup Greek yogurt (plain or vanilla)

1/2 cup fresh lime juice (about 4 limes)

Zest of 2 limes

1/4 cup honey or agave syrup (adjust based on sweetness preference)

1/4 teaspoon salt

Optional: 1/2 cup shredded coconut (unsweetened)

Instructions
 

Prepare the Mixture: In a mixing bowl, combine the coconut milk, Greek yogurt, fresh lime juice, lime zest, honey, and salt. Whisk everything together until the mixture is smooth and well combined.

    Taste and Adjust: Taste the mixture and adjust sweetness as necessary by adding more honey or agave syrup if you prefer a sweeter popsicle.

      Incorporate Coconut (Optional): If using, fold in the shredded coconut to add texture.

        Pour into Molds: Pour the creamy lime mixture into popsicle molds, leaving a little space at the top for expansion.

          Add Sticks: If your molds have a slot for sticks, insert them now. Otherwise, wait until the popsicles start to freeze slightly to insert the sticks later.

              Unmold: To remove the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull the popsicles out.
