Ingredients

4 medium zucchini, spiralized into noodles

1 cup fresh basil leaves

1/2 cup cashews (or pine nuts)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 cloves garlic, minced

1/2 cup extra virgin olive oil

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 cup heavy cream (or coconut cream for a vegan option)

1/4 cup cherry tomatoes, halved (for garnish)

Fresh basil leaves, for garnish

Optional: crushed red pepper flakes, for a little heat

Instructions

Make the Pesto: In a food processor, combine the basil leaves, cashews, Parmesan cheese, and minced garlic. Pulse until coarsely chopped.

Add Oil and Seasoning: With the processor running, slowly drizzle in the olive oil until the mixture is smooth and creamy. Scrape down the sides as needed. Add salt, black pepper, and blend again. Taste and adjust seasoning if necessary.

Prepare Zucchini Noodles: Heat a large skillet over medium heat. Add the spiralized zucchini noodles and sauté for about 2-3 minutes, just until they start to soften but still hold their shape.

Combine Cream and Pesto: In a mixing bowl, combine the pesto with the heavy cream (or coconut cream). Stir until well mixed.

Mix Everything Together: Pour the creamy pesto sauce over the warm zucchini noodles in the skillet. Toss gently to coat the noodles in the sauce, cooking for another 1-2 minutes until heated through.

Serve: Plate the creamy pesto zucchini noodles and garnish with halved cherry tomatoes, fresh basil leaves, and a sprinkle of crushed red pepper flakes, if desired.

Enjoy! Dig into this delightful dish immediately while it’s warm and creamy!
