2 tablespoons olive oil

1 medium onion, diced

2 garlic cloves, minced

1 carrot, diced

1 celery stalk, diced

1 red bell pepper, diced

3 cups ripe tomatoes, chopped (or 2 cans of diced tomatoes)

2 cups vegetable broth

1 teaspoon dried basil

1 teaspoon oregano

Salt and pepper to taste

1 cup heavy cream

1 tablespoon balsamic vinegar

Fresh basil leaves, for garnish

Crusty bread, for serving

Heat Olive Oil: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, around 3-4 minutes.

    Add Aromatics: Stir in the minced garlic, diced carrot, celery, and red bell pepper. Cook for another 5-7 minutes until the vegetables start to soften.

      Incorporate Tomatoes: Add the chopped tomatoes (or canned diced tomatoes) to the pot. Stir well to combine with the sautéed vegetables.

        Simmer the Base: Pour in the vegetable broth, and sprinkle in the dried basil, oregano, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, allowing the flavors to meld.

          Blend for Creaminess: Remove the pot from the heat and use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup and mix it back in.

            Add Cream and Vinegar: Return the soup to low heat, stir in the heavy cream, and balsamic vinegar. Continue to cook for an additional 5 minutes, ensuring it’s heated through and well combined.

              Taste and Adjust: Taste the soup and adjust the seasoning with more salt, pepper, or vinegar, if needed.

                Serve: Ladle the creamy Neapolitan soup into bowls, garnish with fresh basil leaves, and serve with slices of crusty bread on the side.
