300g spaghetti or fettuccine

1 cup fresh ricotta cheese

1/2 cup grated Parmesan cheese

1 lemon (zest and juice)

2 cloves garlic, minced

2 tablespoons olive oil

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Extra Parmesan for serving

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water then drain and set aside.

    Prepare the Sauce: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and red pepper flakes (if using) and sauté for about 1-2 minutes until fragrant.

      Incorporate Ricotta: Lower the heat and add the ricotta cheese to the skillet. Stir for a minute, allowing the ricotta to warm up and soften.

        Add Lemon: Mix in the lemon zest and juice, stirring until well combined. Season with salt and pepper to taste.

          Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing gently to coat the noodles evenly with the creamy ricotta mixture. If the sauce is too thick, gradually add reserved pasta water to reach your desired creaminess.
