Ingredients

1 (9 oz) package refrigerated cheese tortellini

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (15 oz) crushed tomatoes

1 can (6 oz) tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

1 cup heavy cream

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish (optional)

Instructions

Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish and set aside.

Cook the tortellini according to the package instructions until al dente. Drain and set aside.

Prepare the sauce: In a large skillet over medium heat, add the olive oil. Once hot, sauté the diced onion until translucent, about 4-5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Add the tomatoes: Stir in the crushed tomatoes and tomato paste. Mix well to combine. Add the dried oregano, dried basil, salt, and pepper. Let the sauce simmer for about 10 minutes, stirring occasionally.

Incorporate the cream: Reduce the heat to low and slowly stir in the heavy cream. Allow the mixture to simmer for another 5 minutes until it’s heated through and well combined.

Combine tortellini and sauce: In a large mixing bowl, combine the cooked tortellini with the creamy tomato sauce. Gently stir in half of the shredded mozzarella cheese and half of the grated Parmesan cheese.

Transfer to the baking dish: Carefully pour the tortellini mixture into the prepared baking dish. Spread it out evenly.

Top it off: Sprinkle the remaining mozzarella and Parmesan cheese evenly over the top.

Bake: Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the cheese is melted and bubbly.

Garnish and serve: Remove from the oven and let it sit for 5 minutes. Garnish with fresh basil leaves if desired, and serve hot!
