8 ounces penne pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 medium onion, finely chopped

5 ounces fresh spinach (about 6 cups)

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

Zest of 1 lemon

2 tablespoons fresh lemon juice

Fresh basil leaves for garnish (optional)

Cook the Penne: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
