8 ounces fettuccine or your pasta of choice

2 tablespoons olive oil

4 cloves garlic, minced

5 ounces fresh baby spinach

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional)

2 tablespoons chopped fresh basil (for garnish)

Zest of 1 lemon (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve about ½ cup of the pasta water, then drain the pasta and set aside.

    Sauté Garlic: In the same pot over medium heat, add the olive oil. Once heated, add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to let it burn.

      Add Spinach: Stir in the fresh spinach, cooking until wilted, about 2-3 minutes. If using red pepper flakes, add them at this stage for an extra kick.

        Make the Creamy Sauce: Pour in the heavy cream and stir well. Allow it to simmer for 2-3 minutes until slightly thickened. Lower the heat and gradually mix in the grated Parmesan cheese until fully melted and combined.

          Combine Pasta & Sauce: Add the drained pasta to the sauce, tossing to coat. If the sauce is too thick, add a little of the reserved pasta water to reach desired creaminess. Season with salt and pepper to taste.

            Serve: Plate the creamy garlic spinach pasta and garnish with fresh basil and lemon zest for a burst of flavor. Enjoy immediately!
