8 oz fettuccine pasta

2 tablespoons olive oil

4 cloves garlic, minced

2 cups fresh spinach (packed)

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional)

2 tablespoons chopped fresh parsley (for garnish)

Extra Parmesan cheese (for serving)

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta and set aside.

    Sauté the Garlic: In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes, or until fragrant and slightly golden (be careful not to burn it).

      Add Spinach: Stir in the fresh spinach and cook until wilted, about 2-3 minutes.

        Create the Sauce: Reduce heat to low and pour in the heavy cream. Stir, allowing the cream to warm up (do not let it boil). Gradually whisk in the Parmesan cheese until melted and smooth. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency.
