2 cups broccoli florets

3 tablespoons olive oil (divided)

Salt and pepper to taste

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Fresh parsley, chopped, for garnish

Zest of 1 lemon (for serving)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Broccoli: In a mixing bowl, toss the broccoli florets with 2 tablespoons of olive oil, salt, and pepper. Spread them out in a single layer on a baking sheet. Roast in the preheated oven for about 20 minutes, or until they are tender and slightly charred.

      Cook the Pasta: While the broccoli is roasting, boil a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

        Prepare the Cream Sauce: In a large skillet over medium heat, add the remaining tablespoon of olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant (be careful not to burn it). Pour in the heavy cream and bring to a gentle simmer.

          Add Cheese and Seasoning: Stir in the grated Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Let it simmer for a couple of minutes until the sauce thickens slightly. If the sauce is too thick, add a bit of the reserved pasta water until your desired consistency is reached.

            Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss to coat evenly in the creamy garlic sauce. If needed, adjust seasoning with more salt and pepper to taste.
