8 oz (225 g) fettuccine or your choice of pasta

2 tablespoons unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups fresh baby spinach

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for a kick)

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set it aside.

    Sauté Garlic: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1-2 minutes, until fragrant but not browned.

      Create the Cream Sauce: Pour in the heavy cream and bring to a gentle simmer. Stir occasionally for about 3-4 minutes until it starts to thicken.

        Add Cheese: Lower the heat and whisk in the grated Parmesan cheese until fully melted and smooth. If the sauce is too thick, gradually mix in some of the reserved pasta water until desired consistency is reached.

          Combine with Spinach: Stir in the fresh spinach and let it wilt in the sauce for about 2-3 minutes. Season with salt, black pepper, and red pepper flakes if using.

            Toss in Pasta: Add the drained pasta directly into the skillet with the creamy sauce. Toss gently to combine, ensuring every strand is coated with the sauce.
