8 oz (225g) fettuccine or pasta of choice

2 tbsp olive oil

4 cloves garlic, minced

10 oz (280g) mushrooms, sliced (preferably a mix of cremini and shiitake)

1 cup heavy cream (or coconut milk for a lighter option)

1 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1 tsp Italian seasoning

Salt and pepper to taste

1 cup baby spinach (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Garlic and Mushrooms: In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it! Add the sliced mushrooms and cook for about 5-7 minutes, stirring occasionally, until they are golden and tender.

      Make the Cream Sauce: Lower the heat, then pour in the heavy cream. Stir in the Italian seasoning, salt, and pepper. Bring the mixture to a gentle simmer, allowing it to thicken for about 3-5 minutes.

        Combine Pasta and Sauce: Add the cooked pasta to the pot and toss it in the creamy mushroom sauce. If the sauce is too thick, gradually stir in some of the reserved pasta water until you reach your desired consistency.

          Add Spinach and Cheese: Mix in the baby spinach (if using) until just wilted, then sprinkle in the grated Parmesan cheese and stir well to combine. Adjust seasoning with extra salt and pepper if needed.
