Ingredients

12 oz fettuccine pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cubed

2 cups fresh spinach leaves

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the cubed chicken and season with salt, pepper, and Italian seasoning. Cook for 5-7 minutes, or until the chicken is browned and cooked through. Remove chicken from the skillet and keep warm.

Cook the Spinach: In the same skillet, add the minced garlic and cook for about 1 minute until fragrant. Add the fresh spinach and sauté until wilted, about 2-3 minutes.

Create the Sauce: Lower the heat to medium and pour in the heavy cream, stirring to combine. Bring it to a gentle simmer, then gradually whisk in the grated Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Combine Everything: Return the cooked chicken to the skillet, then add the drained fettuccine. Toss gently to coat the pasta, chicken, and spinach in the creamy sauce. Adjust seasoning with salt and pepper to taste.

Serve: Divide the creamy chicken Alfredo pasta among plates. Garnish with chopped parsley and more Parmesan cheese if desired. Serve hot and enjoy your meal!
