4 boneless, skinless chicken breasts

1 tablespoon Cajun seasoning

Salt and pepper to taste

2 tablespoons olive oil

8 ounces mushrooms, sliced (such as cremini or button)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 teaspoon Dijon mustard

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Season the Chicken: Pat the chicken breasts dry with paper towels. Rub Cajun seasoning all over the chicken, adding salt and pepper to taste.

      Brown the Chicken: In a large oven-safe skillet, heat olive oil over medium heat. Add the chicken breasts and sear for about 5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
