8 oz (about 225g) penne pasta

2 tbsp olive oil

1 lb (about 450g) boneless, skinless chicken breasts, diced

1 cup (240ml) buffalo sauce (adjust to taste)

1 cup (240ml) heavy cream

1 cup (about 100g) shredded cheddar cheese

1 cup (about 100g) cream cheese, softened

1 cup (about 150g) diced celery

1/2 cup (about 75g) chopped green onions

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

Chopped parsley for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken and season with garlic powder, onion powder, salt, and pepper. Cook until the chicken pieces are browned and cooked through, about 5-7 minutes.

      Make the Sauce: Lower the heat to medium and add the buffalo sauce to the skillet with the cooked chicken. Stir to coat the chicken evenly. Then, pour in the heavy cream, and add the softened cream cheese. Stir continuously until the cream cheese fully melts and combines with the sauce.

        Add the Cheese: Gradually mix in the shredded cheddar cheese, stirring until it's all melted and creamy. If the sauce is too thick, you can add a splash of pasta water or more heavy cream to reach your desired consistency.
