12 oz (340 g) pasta of your choice (fusilli or penne recommended)

1 ripe avocado, pitted and peeled

1/2 cup Greek yogurt (or sour cream)

1/4 cup buttermilk (or milk for a lighter version)

1 packet (1 oz) ranch dressing mix (dry powder)

2 cloves garlic, minced

1 tablespoon fresh lemon juice

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/2 cup corn (fresh or frozen)

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro or parsley, chopped (for garnish)

Crushed red pepper flakes (optional, for heat)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Make the Avocado Ranch Sauce: In a blender or food processor, combine the avocado, Greek yogurt, buttermilk, ranch dressing mix, minced garlic, lemon juice, and a pinch of salt and pepper. Blend until smooth and creamy, adding reserved pasta water as needed to achieve desired consistency.

      Combine Ingredients: In a large mixing bowl, combine the cooked pasta, cherry tomatoes, corn, red onion, and avocado ranch sauce. Toss everything together until the pasta is well coated. Adjust seasoning with additional salt and pepper if necessary.
