Ingredients

4 large hard-boiled eggs, peeled and chopped

1 ripe avocado, peeled and pitted

2 tablespoons Greek yogurt or mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

¼ cup finely chopped red onion

¼ cup diced celery

2 tablespoons chopped fresh dill or parsley (optional)

4 large whole wheat or spinach wraps

Lettuce leaves for wrapping (optional)

Instructions

Prepare the Egg Mixture: In a mixing bowl, combine the chopped hard-boiled eggs, diced celery, and red onion.

Make the Creamy Avocado Base: In another bowl, mash the ripe avocado with a fork until smooth. Add the Greek yogurt (or mayonnaise), Dijon mustard, lemon juice, garlic powder, onion powder, salt, and pepper. Mix until well combined and creamy.

Combine Everything: Gently fold the creamy avocado mixture into the egg mixture. If using, stir in the chopped fresh dill or parsley for a burst of freshness.

Assemble the Wraps: Lay out a whole wheat or spinach wrap on a flat surface. Place a few lettuce leaves in the center (if using) and then spoon a generous amount of the avocado egg salad onto the lettuce.

Wrap It Up: Carefully fold in the sides of the wrap, then roll it tightly from the bottom up to enclose the filling. Repeat with the remaining wraps and filling.

Serve and Enjoy: Slice the wraps in half diagonally and serve immediately, or wrap them in foil for a tasty lunch on the go!
