Cold Italian Veggie Pasta Salad

8 oz (225g) rotini or farfallini pasta

1 cup cherry tomatoes, halved

1 cup cucumbers, diced

1 cup bell peppers (red and yellow), diced

½ cup red onion, finely chopped

½ cup black or green olives, pitted and sliced

1 cup mozzarella balls, halved (or diced mozzarella)

½ cup fresh basil leaves, torn

¼ cup grated Parmesan cheese

½ cup Italian dressing (store-bought or homemade)

Salt and pepper to taste

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini or farfallini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process and cool the pasta. Let it drain completely.

    Prepare the Veggies: While the pasta is cooking, wash and chop the cherry tomatoes, cucumbers, bell peppers, and red onions. Place them in a large mixing bowl. Add the olives and mozzarella balls to the bowl as well.

      Combine Ingredients: Once the pasta has cooled, add it to the bowl with the veggies. Drizzle the Italian dressing over the top and toss everything gently to combine.

        Add Fresh Elements: Gently fold in the torn basil leaves and sprinkle the grated Parmesan cheese over the salad. Season with salt and pepper to taste.

          Chill and Serve: Cover the bowl with plastic wrap or a lid, and refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld. Adjust the seasoning before serving if needed.
