1 can (15 oz) chickpeas, rinsed and drained

1 large cucumber, diced

1 cup cherry tomatoes, halved

1/4 red onion, finely chopped

1 small bell pepper (red or yellow), diced

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons olive oil

2 tablespoons lemon juice (freshly squeezed)

1 clove garlic, minced

1/2 teaspoon cumin

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the drained chickpeas, diced cucumber, halved cherry tomatoes, red onion, bell pepper, and chopped parsley. If using, add the crumbled feta cheese.

    In a small bowl, whisk together the olive oil, lemon juice, minced garlic, cumin, salt, and pepper until well combined.

      Pour the dressing over the chickpea and vegetable mixture. Gently toss everything together until evenly coated.

        Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld together.
