Cold Chicken & Veggie Pasta Bowls

Ingredients
  

2 cups rotini or penne pasta

1 cup cooked, shredded chicken breast (store-bought or homemade)

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 bell pepper (any color), diced

½ cup sweet corn (fresh or frozen)

½ cup black olives, sliced

¼ cup red onion, thinly sliced

¼ cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the rotini or penne pasta according to package instructions until al dente. Drain and rinse under cold water to cool down the pasta completely. This will prevent it from becoming mushy.

    Prep the Veggies: While the pasta is cooling, wash and prepare all your vegetables. Halve the cherry tomatoes, dice the cucumber and bell pepper, and thinly slice the red onion. If using frozen corn, ensure it is thawed.

      Combine Ingredients: In a large mixing bowl, add the cooled pasta, shredded chicken, cherry tomatoes, cucumber, bell pepper, corn, black olives, red onion, and parsley. If you’re using feta cheese, add it at this stage as well.

        Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper until well combined.

          Dress the Pasta: Drizzle the dressing over the pasta and vegetable mixture. Gently toss everything together until evenly coated with the dressing, making sure all ingredients are well-distributed.

            Chill: Cover the bowl with plastic wrap or a lid and chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.
