Ingredients

2 cups rolled oats

1 cup shredded unsweetened coconut

1/2 cup almond butter (or peanut butter)

1/2 cup honey or maple syrup

1/4 cup cocoa powder

1/2 cup chopped dark chocolate or chocolate chips

1/4 cup chopped nuts (e.g., almonds or walnuts)

1/2 tsp vanilla extract

1/4 tsp sea salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper, leaving some overhang on the sides for easy removal later.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, shredded coconut, cocoa powder, chopped nuts, and sea salt. Stir well to evenly distribute the ingredients.

Combine Wet Ingredients: In a separate bowl, whisk together the almond butter, honey (or maple syrup), and vanilla extract until smooth and well combined.

Combine Mixtures: Pour the wet mixture into the dry ingredients and mix until everything is evenly incorporated. Lastly, fold in the chopped dark chocolate or chocolate chips.

Press into Dish: Transfer the mixture into the prepared baking dish. Use a spatula or your hands to press down firmly, ensuring the mixture is compact and even.

Bake: Place the dish in the oven and bake for about 20-25 minutes, or until the edges are slightly golden and the center is set.

Cool and Cut: Remove from the oven and let it cool completely in the pan on a wire rack. Once cooled, use the parchment paper to lift the bars out of the dish and place them on a cutting board. Cut into squares or rectangles.

Store: Enjoy immediately or store in an airtight container at room temperature for up to a week. For longer shelf life, keep refrigerated.
