Classic Chicken Potstickers

For the Filling:

1 lb ground chicken

1 cup finely chopped cabbage

1/2 cup shredded carrots

1/4 cup green onions, sliced

2 cloves garlic, minced

1 tsp fresh ginger, grated

2 tbsp soy sauce

1 tbsp sesame oil

1 tsp cornstarch

Salt and pepper, to taste

For the Potsticker Wrappers:

2 cups all-purpose flour

1/2 cup water (plus additional for sealing)

1/4 tsp salt

For Cooking:

2 tbsp vegetable oil

1/2 cup water (for steaming)

For Dipping Sauce:

3 tbsp soy sauce

1 tbsp rice vinegar

1 tsp sesame oil

1 tsp chili oil (optional)

1 tsp chopped fresh herbs (like cilantro, for garnish)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine ground chicken, chopped cabbage, shredded carrots, green onions, garlic, ginger, soy sauce, sesame oil, cornstarch, salt, and pepper. Mix until well combined. Set aside.

    Make the Dough: In a medium bowl, mix flour and salt. Gradually add water and stir until the dough comes together. Knead on a floured surface for about 5 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

      Roll the Wrappers: After resting, divide the dough into small pieces (about 1 inch each). Roll each piece into a thin circle, approximately 3 inches in diameter. Dust with flour to prevent sticking.

        Fill the Potstickers: Place a teaspoon of filling in the center of each wrapper. Moisten the edges with a little water, then fold the wrapper in half and pinch to seal. You can create pleats on one side for added texture.

          Cook the Potstickers: Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the potstickers, flat side down. Cook for about 2-3 minutes, or until the bottoms are golden brown.

            Steam the Potstickers: Carefully add 1/2 cup of water to the skillet (it will sizzle!). Cover immediately with a lid and let steam for about 5-7 minutes until the water evaporates and the potstickers are fully cooked.

              Make the Dipping Sauce: In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, chili oil (if using), and garnish with fresh herbs.

                Serve: Once cooked, remove the potstickers and serve hot with the dipping sauce on the side.
