1 lb (450g) boneless, skinless chicken breasts, sliced thinly

3 cups fresh broccoli florets

1 medium bell pepper, sliced (any color)

2 cloves garlic, minced

1-inch piece of ginger, minced

3 tablespoons soy sauce (low sodium preferred)

1 tablespoon oyster sauce (optional)

2 tablespoons vegetable oil (divided)

1 tablespoon cornstarch

1/4 cup chicken broth or water

1 tablespoon sesame oil

2 spring onions, sliced for garnish

Cooked jasmine or brown rice (for serving)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the sliced chicken with soy sauce, oyster sauce (if using), and cornstarch. Mix until the chicken is evenly coated and marinate for at least 15 minutes.

    Prepare the Broccoli: While the chicken is marinating, bring a pot of water to a boil. Blanch the broccoli florets for 1-2 minutes until bright green and slightly tender. Remove from heat, drain, and set aside.

      Heat the Oil: In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat.

        Cook the Chicken: Add the marinated chicken to the pan in a single layer. Let it sear without moving for about 2 minutes, then stir-fry for another 2-3 minutes until cooked through. Remove chicken from the wok and set aside.

          Sauté the Vegetables: In the same wok, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, sautéing for about 30 seconds until fragrant. Then, add the blanched broccoli and sliced bell pepper. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.

            Combine Ingredients: Return the cooked chicken to the wok with the vegetables. Add the chicken broth (or water) and sesame oil. Stir well to combine and let cook for an additional 1-2 minutes, allowing the sauce to thicken slightly.

              Garnish and Serve: Remove from heat, and garnish with sliced spring onions. Serve immediately over cooked jasmine or brown rice.
