Ingredients

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon vanilla extract

For the cheesecake filling:

16 oz (2 packages) cream cheese, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup sour cream

¼ cup all-purpose flour (optional, for a thicker texture)

For the cherry topping:

1 can (21 oz) cherry pie filling

1 tablespoon lemon juice

Fresh cherries for garnish (optional)

Instructions

Preheat the oven to 325°F (160°C). Line an 8x8-inch baking pan with parchment paper, allowing the edges to hang over for easy removal later.

Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, sugar, and vanilla. Mix until the crumbs are thoroughly coated and resemble wet sand. Press this mixture evenly into the bottom of the prepared baking pan. Bake for 10 minutes, then remove from the oven and set aside to cool slightly.

Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add the sugar, mixing until well combined.

Incorporate the eggs: Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract and sour cream, combining until smooth. If you prefer a thicker cheesecake, fold in the flour at this stage.

Pour the filling: Carefully pour the cheesecake mixture over the cooled crust, spreading it evenly with a spatula.

Bake the cheesecake: Bake the cheesecake bars in the preheated oven for 25-30 minutes or until the edges are set, and the center has a slight jiggle. Turn off the oven and leave the cheesecake inside for an additional 10 minutes.

Cool and chill: After removing from the oven, let the cheesecake cool at room temperature for about 30 minutes before transferring it to the refrigerator. Chill for at least 2-3 hours, or until completely set.

Prepare the cherry topping: In a small saucepan, combine cherry pie filling and lemon juice. Heat over medium until warmed through, then let it cool.

Assemble and serve: Once the cheesecake is fully chilled, remove it from the pan using the parchment paper. Cut into bars and top each piece with a spoonful of the cherry filling. Optionally, garnish with fresh cherries for an extra touch.

                    Enjoy your delicious cheesecake bars!
