Classic Beef Shepherd’s Pie

For the Filling:

1 lb (450g) ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium carrots, diced

1 cup peas (fresh or frozen)

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 cup beef broth

1 teaspoon thyme (dried or fresh)

1 teaspoon rosemary (dried or fresh)

Salt and pepper to taste

2 tablespoons olive oil

For the Mashed Potatoes:

2 lbs (900g) potatoes, peeled and cubed

1/2 cup milk

1/4 cup unsalted butter

Salt and pepper to taste

Optional: 1/2 cup grated cheddar cheese for topping

Instructions
 

Prepare the Mashed Potatoes:

    - Place the cubed potatoes into a large pot and cover with cold water. Add a pinch of salt.

      - Bring to a boil over medium-high heat, then reduce to a simmer. Cook until the potatoes are fork-tender, about 15-20 minutes. Drain well.

        - In the same pot, add the butter and milk to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper. Set aside.

          Cook the Beef Filling:

            - In a large skillet, heat olive oil over medium heat. Add the chopped onion and diced carrots, cooking until tender, about 5-7 minutes.

              - Stir in the minced garlic and cook for an additional 1 minute until fragrant.

                - Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned and no longer pink, around 7-10 minutes. Drain excess fat if needed.

                  - Stir in the tomato paste, Worcestershire sauce, beef broth, thyme, rosemary, and season with salt and pepper. Bring to a gentle simmer and cook for about 10 minutes until slightly thickened.

                    - Finally, fold in the peas, cooking for an additional 2-3 minutes. Remove from heat.

                      Assemble the Shepherd’s Pie:

                        - Preheat your oven to 400°F (200°C).

                          - In a large baking dish, spread the beef filling evenly on the bottom.

                            - Layer the creamy mashed potatoes on top of the beef filling, smoothing with a spatula. For an extra touch, create texture on the surface using a fork.

                              - If desired, sprinkle grated cheddar cheese on top.

                                Bake:

                                  - Place the Shepherd's Pie in the preheated oven and bake for 25-30 minutes or until the top is golden and slightly crispy.

                                    - Allow to cool for a few minutes before serving.
