Tortilla Chips: 10 ounces (about 300g, preferably thick-cut)

Ground Beef: 1 pound (450g)

Olive Oil: 1 tablespoon

Taco Seasoning: 2 tablespoons

Refried Beans: 1 cup (optional, for extra creaminess)

Shredded Cheddar Cheese: 2 cups (about 8 ounces)

Shredded Monterey Jack Cheese: 1 cup (about 4 ounces)

Jalapeños: 1/4 cup, sliced (fresh or pickled, to taste)

Tomato: 1 medium, diced

Green Onions: 1/4 cup, chopped

Sour Cream: For serving

Guacamole: For serving

Fresh Cilantro: Optional, for garnish

Prepare the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon. Drain excess fat if necessary.

    Season the Meat: Sprinkle the taco seasoning over the cooked beef and add about 1/4 cup of water (or as directed on the seasoning packet). Stir well and let it simmer for about 5 minutes, until fully combined and the liquid has mostly evaporated.

      Preheat the Oven: While the beef is cooking, preheat your oven to 350°F (175°C).

        Layer the Nachos: On a large baking sheet or oven-safe platter, spread out half of the tortilla chips. Top the chips with half of the refried beans (if using), half of the seasoned beef, half of the cheddar, and half of the Monterey Jack cheese. Repeat with another layer of chips and toppings.

          Add the Jalapeños: Scatter the sliced jalapeños over the top layer of cheese, adjusting the quantity based on your heat preference.

            Bake: Place the nachos in the preheated oven and bake for about 10-12 minutes, or until the cheese is bubbling and melted.

              Top with Fresh Ingredients: Remove the nachos from the oven and immediately sprinkle diced tomatoes and chopped green onions over the top.

                Serve: Serve hot with sides of sour cream and guacamole. Garnish with fresh cilantro if desired.
