Cinnamon Raisin Swirl Bread

4 cups all-purpose flour

1 packet (2¼ tsp) active dry yeast

¾ cup warm milk (110°F or 43°C)

¼ cup granulated sugar

1 teaspoon salt

1 teaspoon ground cinnamon

¼ cup unsalted butter, softened

2 large eggs

1 cup raisins (preferably golden raisins for added sweetness)

1 tablespoon cinnamon (for the filling)

¼ cup brown sugar (for the filling)

Instructions
 

Activate the Yeast: In a small bowl, combine the warm milk and 1 tablespoon of granulated sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes, until it becomes frothy.

    Prepare the Dough: In a large mixing bowl, combine the flour, remaining sugar, salt, and ground cinnamon. In a separate bowl, beat the eggs and mix in the softened butter. Add the yeast mixture to the egg-butter mixture and then add the dry ingredients to the wet ingredients gradually.

      Knead the Dough: Once the mixture comes together, turn it out onto a floured surface and knead it for about 8-10 minutes until it is smooth and elastic. If the dough is too sticky, add a little more flour as needed.

        First Rise: Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

          Prepare the Filling: In a small bowl, combine the raisins, brown sugar, and cinnamon for the filling. Set aside.

            Shape the Bread: Once the dough has risen, punch it down to release the air. Roll it out on a floured surface into a rectangle, approximately 12 x 18 inches. Spread the cinnamon-raisin filling evenly over the surface of the dough.

              Roll & Shape: Carefully roll the dough tightly from the long end, sealing the seam as you go. Pinch the ends closed. Gently lift the rolled dough and place it seam-side down in a greased loaf pan.

                Second Rise: Cover the loaf pan with a damp cloth and let the dough rise again for about 30-40 minutes, until it has risen above the edge of the pan.

                  Preheat and Bake: Preheat your oven to 350°F (175°C). Once heated, bake the bread for 30-35 minutes, or until it is golden brown and sounds hollow when tapped on the bottom.

                    Cool: Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
