Chocolate Peanut Butter Banana Pops

3 ripe bananas

1 cup creamy peanut butter

1 cup dark chocolate chips (or milk chocolate for a sweeter flavor)

1 tablespoon coconut oil (optional, for smoother chocolate)

1/2 cup crushed nuts (like almonds or peanuts, for sprinkling)

1/4 cup shredded coconut (optional, for added texture)

Instructions
 

Prepare the Bananas: Peel the bananas and cut them in half. Insert a wooden popsicle stick into the cut end of each banana half, creating a handle. Place the banana pops on a parchment-lined baking sheet.

    Make the Peanut Butter Coating: In a bowl, microwave the peanut butter for about 30 seconds, or until it's warm and slightly runny. This will make it easier to coat the bananas. Stir the peanut butter to ensure it’s smooth.

      Coat the Bananas: Using a spoon, generously coat each banana popsicle with the warm peanut butter, making sure to cover them evenly. Return the coated bananas to the baking sheet.

        Prepare the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat in the microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.

          Dip the Banana Pops: Once the chocolate is melted, dip each peanut butter-coated banana pop into the chocolate, ensuring it's fully covered. Allow any excess chocolate to drip off.

            Add Toppings: Before the chocolate hardens, sprinkle crushed nuts and shredded coconut on top of each dipped banana pop for a crunchy texture and additional flavor.

              Freeze: Transfer the baking sheet with the chocolate-covered banana pops to the freezer. Freeze for at least 2 hours or until solid.

                Serve and Enjoy: Once frozen, remove carefully from the parchment paper, serve immediately, or store in an airtight container in the freezer for later enjoyment.
