4 ripe but firm peaches

1 cup dark chocolate chips (70% cocoa recommended)

2 tablespoons coconut oil (or any neutral oil)

1 teaspoon sea salt

1 tablespoon chopped nuts (almonds or pistachios, optional)

1 tablespoon shredded coconut (optional)

1 teaspoon vanilla extract (optional)

Instructions
 

Prepare the Peaches: Start by washing the peaches under cool water. Slice each peach into bite-sized wedges, discarding the pit. Pat them dry with a paper towel to ensure they freeze well.

    Freeze the Peach Wedges: Arrange the peach wedges on a baking sheet lined with parchment paper, ensuring they don’t touch each other. Place the baking sheet in the freezer and freeze for about 1-2 hours until the peaches are solid.

      Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second increments, stirring between each interval, until the chocolate is fully melted and smooth. Add vanilla extract if using and mix well.

        Coat the Peaches: Remove the frozen peach wedges from the freezer. Working quickly, dip each wedge into the melted chocolate, ensuring it’s fully covered. Lift the wedge out and let excess chocolate drip off before placing it back on the parchment-lined baking sheet.
