Cherry Glazed Tofu

1 block (14 oz) firm tofu, pressed and drained

1 cup fresh or frozen cherries, pitted

1/2 cup cherry juice (or 100% unsweetened cherry juice)

2 tablespoons soy sauce

2 tablespoons maple syrup (or agave syrup)

1 tablespoon rice vinegar

1 teaspoon cornstarch (optional, for thickening)

2 tablespoons sesame oil (for cooking)

2 cloves garlic, minced

1 teaspoon fresh ginger, grated (or 1/2 teaspoon ground ginger)

Salt and pepper, to taste

Sesame seeds and sliced green onions, for garnish

Instructions
 

Prepare the Tofu: Start by pressing the tofu to remove excess moisture. Slice the pressed tofu into 1-inch cubes and season lightly with salt and pepper.

    Make the Cherry Glaze: In a small saucepan over medium heat, combine the cherries, cherry juice, soy sauce, maple syrup, rice vinegar, garlic, and ginger. Bring the mixture to a simmer, then reduce the heat to low. Allow it to simmer for about 10-15 minutes, stirring occasionally.

      Thicken the Glaze (optional): If you prefer a thicker glaze, mix the cornstarch with a tablespoon of water to create a slurry. Slowly add this to the cherry mixture, stirring continuously until the glaze thickens. Remove from heat and set aside.

        Cook the Tofu: In a large skillet or frying pan, heat the sesame oil over medium-high heat. Add the tofu cubes and fry them for about 4-5 minutes on each side or until golden brown and crispy.

          Combine: Once the tofu is cooked, pour the cherry glaze over the tofu in the skillet. Carefully toss to coat all the tofu cubes with the glaze, cooking for an additional 2-3 minutes until everything is hot and well combined.

            Serve: Remove from heat and garnish with sesame seeds and sliced green onions. Serve the cherry glazed tofu over steamed rice or alongside your favorite stir-fried vegetables for a complete meal.
