4 large flour tortillas

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 cup bell peppers (any color), diced

1 cup zucchini, diced

1 cup mushrooms, diced

1 small red onion, finely chopped

1 teaspoon garlic powder

1 teaspoon cumin

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Sour cream or salsa, for serving

Instructions
 

Prep the Veggies: In a medium skillet, heat the olive oil over medium heat. Add the diced bell peppers, zucchini, mushrooms, and red onion. Sauté for about 5-7 minutes until the vegetables are tender. Season with garlic powder, cumin, salt, and pepper. Remove from heat.

    Prepare the Quesadilla Filling: In a large bowl, combine the sautéed vegetables with the shredded mozzarella and cheddar cheese. Mix well until everything is evenly incorporated.

      Assemble the Quesadillas: Lay out the flour tortillas on a clean surface. Spoon a generous portion of the veggie-cheese mixture onto half of each tortilla. Fold the other half over to create a half-moon shape.
