Cheesy Vegetable Quesadillas for Busy Nights

4 large flour tortillas

1 cup shredded cheese (cheddar or a Mexican blend)

1 medium zucchini, grated

1 cup baby spinach, roughly chopped

1 cup bell peppers (red, yellow, or green), diced

1 cup corn kernels (fresh, frozen, or canned)

1/2 cup black beans, rinsed and drained

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons olive oil (or cooking spray)

Optional: salsa, guacamole, or sour cream for serving

Instructions
 

Prepare the Veggies: In a large bowl, combine the grated zucchini, chopped spinach, diced bell peppers, corn, and black beans. Add salt, pepper, cumin, and garlic powder. Mix well to combine.

    Heat the Skillet: In a large skillet, heat 1 tablespoon of olive oil over medium heat. If using cooking spray, lightly coat the skillet instead.

      Assemble the Quesadilla: Place one tortilla in the hot skillet. Sprinkle half of the shredded cheese evenly over the tortilla, followed by half of the vegetable mixture. Top with the remaining cheese, then place a second tortilla on top.

        Cook the Quesadilla: Cook for 3-4 minutes or until the bottom tortilla is golden brown and the cheese starts to melt. Carefully flip the quesadilla using a large spatula and cook the other side for another 3-4 minutes until golden and crispy.

          Repeat: Remove the cooked quesadilla from the skillet and keep it warm in a low oven (around 200°F/95°C). Repeat the process with the remaining tortillas, filling, and cheese.

            Serve: Cut each quesadilla into wedges and serve warm with salsa, guacamole, or sour cream on the side.
