1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

5 cups fresh spinach, chopped

6 large eggs

1 cup milk

1 cup shredded cheddar cheese

1 cup feta cheese, crumbled

1 cup cooked sausage (optional, or use a meat substitute)

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon crushed red pepper flakes (optional)

4 slices of whole grain bread, cubed

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with non-stick spray or a little olive oil.

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

      Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and allow to cool slightly.

        In a large bowl, whisk together the eggs, milk, salt, pepper, and crushed red pepper flakes (if using).

          Fold in the sautéed spinach and onion mixture, along with the cooked sausage (if using), shredded cheddar cheese, and crumbled feta cheese.

            Gently fold in the cubed bread, ensuring that all bread pieces are well-coated with the egg mixture.

              Transfer the mixture to the greased baking dish, spreading it evenly.

                Bake in the preheated oven for 30-35 minutes, or until the casserole is set in the middle and slightly golden on top.

                  Once baked, allow the casserole to cool for a few minutes before slicing. Garnish with freshly chopped parsley if desired.
