Cheesy Spinach & Artichoke Pasta

8 oz (226g) pasta (penne or fusilli work well)

2 cups fresh spinach, chopped

1 cup canned artichoke hearts, drained and chopped

1 cup cream cheese, softened

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 cup milk (whole or 2%)

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon Italian seasoning

½ teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain the pasta, reserving about 1 cup of the pasta water, and set it aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant but not browned.

      Add Spinach and Artichokes: Add the chopped spinach and artichoke hearts to the skillet. Sauté for 2-3 minutes, stirring until the spinach wilts and everything is heated through.

        Make the Cheese Sauce: Lower the heat and stir in the cream cheese, mixing until melted and smooth. Gradually add the milk, stirring continuously until the sauce is creamy. Then, add the mozzarella and Parmesan cheeses, mixing until everything is well combined and melted.

          Season the Sauce: Stir in the Italian seasoning, crushed red pepper flakes (if using), and season with salt and pepper. If the sauce seems too thick, gradually add some reserved pasta water until you reach the desired consistency.

            Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss to fully coat the pasta in the cheese sauce. If needed, adjust the seasoning once more and keep the heat on low for 2-3 minutes to allow the pasta to absorb some of the sauce.
