To elevate your Cheesy Spinach Artichoke Chicken Bake, seasoning the chicken properly is crucial. Start by patting the chicken breasts dry with a paper towel. This helps the seasoning adhere better and promotes a nice sear if you choose to brown the chicken before baking. For seasoning, a mix of salt, pepper, garlic powder, and onion powder works wonders.

Ingredients

4 boneless, skinless chicken breasts

1 can (14 oz) artichoke hearts, drained and chopped

1 cup frozen spinach, thawed and excess water squeezed out

1 cup cream cheese, softened

1/2 cup sour cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional)

Olive oil (for greasing the baking dish)

Fresh parsley, chopped (for garnish)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C).

Prepare Chicken: Lightly grease a baking dish with olive oil. Place the chicken breasts in the dish, ensuring they are evenly spaced. Season both sides with salt, black pepper, and onion powder.

Make the Spinach Artichoke Mixture: In a medium bowl, combine the softened cream cheese and sour cream. Stir in the chopped artichokes, thawed spinach, minced garlic, crushed red pepper flakes (if using), half of the mozzarella cheese, and half of the Parmesan cheese. Mix everything together until well combined.

Assemble the Bake: Spread the spinach artichoke mixture evenly over the chicken breasts, covering them entirely with the cheesy goodness.

Top with Cheese: Sprinkle the remaining mozzarella and Parmesan cheese over the top of the mixture.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the cheese is bubbly and slightly golden.

Garnish and Serve: Once done, remove from the oven and let it rest for about 5 minutes. Garnish with freshly chopped parsley before serving. Enjoy your Cheesy Spinach Artichoke Chicken Bake with a side of rice, pasta, or a fresh salad!
