Cheesy French Onion Pasta Skillet

12 oz (340g) pasta (such as fusilli or penne)

2 large onions, thinly sliced

4 cloves garlic, minced

2 cups beef or vegetable broth

1 cup heavy cream

1 ½ cups shredded Gruyère cheese (or Swiss cheese)

1 cup shredded mozzarella cheese

3 tbsp unsalted butter

2 tbsp olive oil

1 tbsp balsamic vinegar

2 tsp fresh thyme leaves (or 1 tsp dried thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside.

    Caramelize the Onions: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring frequently, for about 20-25 minutes, or until the onions are deeply caramelized and golden brown. If they brown too quickly, reduce the heat.

      Add Garlic and Thyme: Stir in the minced garlic and thyme, cooking for an additional 1-2 minutes until fragrant.

        Deglaze the Pan: Add the balsamic vinegar to the skillet, scraping up any browned bits from the bottom.

          Create the Sauce: Pour in the beef or vegetable broth, and then bring to a simmer. Allow it to reduce slightly for about 5 minutes. Stir in the heavy cream, and let it simmer for another 2-3 minutes. Season with salt and pepper to taste.

            Combine Pasta and Cheese: Add the cooked pasta to the skillet and stir to combine. Remove from heat, then gradually add the Gruyère and mozzarella cheese, stirring until melted and combined.

              Finish with Butter: Stir in the remaining 2 tablespoons of butter for extra creaminess.

                Serve and Garnish: Transfer the cheesy pasta to serving plates or bowls. Garnish with chopped parsley, extra thyme, and a sprinkle of cheese if desired.
