8 oz (about 2 cups) elbow macaroni or pasta of choice

1 lb ground beef or turkey

1 (15 oz) can of kidney beans, rinsed and drained

1 (15 oz) can of black beans, rinsed and drained

1 (15 oz) can of diced tomatoes with green chilies

1 (15 oz) can of chili beans in sauce

1 cup beef or vegetable broth

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

2 cups shredded cheddar cheese (or a blend of your favorite cheeses)

Chopped fresh cilantro or green onions for garnish (optional)

1 tablespoon olive oil

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside.

    Brown the Meat: In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef or turkey. Break it up with a spoon and cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

      Combine Ingredients: To the meat, add the kidney beans, black beans, diced tomatoes with green chilies, chili beans, and beef or vegetable broth. Stir in chili powder, cumin, garlic powder, onion powder, salt, and pepper. Bring the mixture to a simmer.

        Add the Pasta: Once the mixture is simmering, gently fold in the cooked pasta and stir until everything is evenly combined. Let it simmer for an additional 5 minutes to heat through and allow the flavors to meld.

          Cheesy Goodness: Sprinkle the shredded cheese all over the top of the pasta mixture. Cover the skillet with a lid and let it cook for another 2-3 minutes, or until the cheese is melted and gooey.
