Ingredients

2 cups rotini pasta

1 lb boneless, skinless chicken breast, diced

2 cups fresh broccoli florets

3 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

Salt and pepper to taste

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. In the last 3 minutes of cooking, add the broccoli florets to the pot. Drain and set aside.

Sauté the Chicken: While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the diced chicken, season with salt, pepper, and Italian seasoning. Sauté for about 5-7 minutes, or until the chicken is golden and cooked through. Remove from the skillet and set aside.

Make the Alfredo Sauce: In the same skillet, add a little more olive oil if necessary, and sauté the minced garlic for about 30 seconds, until fragrant. Pour in the heavy cream, stirring constantly, and bring to a simmer. Gradually add the grated Parmesan cheese, stirring until melted and smooth.

Combine Ingredients: Add the cooked chicken and pasta to the skillet with the Alfredo sauce. Stir in the broccoli and mozzarella cheese until everything is well-coated and heated through. Adjust seasoning with additional salt and pepper if needed.

Serve: Transfer the Cheesy Chicken Broccoli Alfredo to serving plates, sprinkle with fresh parsley for garnish, and enjoy while hot!
