3 tablespoons butter

¼ cup all-purpose flour

½ teaspoon smoked paprika (optional)

Sauté the Vegetables: In a large pot, melt the butter over medium heat. Add the diced onion and carrot, sautéing for about 4-5 minutes until the onions become translucent. Stir in the minced garlic and cook for an additional minute.

    Add the Broccoli and Potatoes: Add the broccoli florets and diced potatoes to the pot. Stir and cook for another 2-3 minutes, allowing them to soften slightly.

      Create the Broth Base: Pour in the vegetable or chicken broth, ensuring the vegetables are fully submerged. Bring to a boil, then reduce to a simmer, covering the pot. Let it simmer for about 15-20 minutes until the broccoli and potatoes are tender.

        Thicken the Soup: In a small bowl, whisk together the flour and milk until smooth (this will be your roux). Gradually add it to the simmering soup, stirring continuously to prevent lumps. Allow the mixture to thicken for another 5-7 minutes.
