4 cups fresh broccoli florets (or frozen, thawed)

1 cup sharp cheddar cheese, grated

1/2 cup cream cheese, softened

1 cup low-sodium chicken or vegetable broth

1/2 cup milk

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon Dijon mustard

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

1/2 cup breadcrumbs (whole wheat or gluten-free)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, cooking for 3-4 minutes until the onion is translucent and fragrant.

      Prepare the Cheese Mixture: In a large mixing bowl, combine the cooked brown rice, sautéed onions and garlic, cream cheese, cheddar cheese, chicken or vegetable broth, milk, Dijon mustard, onion powder, garlic powder, black pepper, and salt. Stir well until everything is evenly combined.

        Add Broccoli: Gently fold in the broccoli florets into the rice and cheese mixture, ensuring the broccoli is well-distributed.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly.

            Add Topping: In a small bowl, mix breadcrumbs with a drizzle of olive oil (about 1 tablespoon) until they’re lightly coated. Sprinkle the breadcrumb mixture evenly over the casserole.
