Cheesy Broccoli and Rice Casserole for Families

2 cups of broccoli florets (fresh or frozen)

1 cup of uncooked long-grain white rice

2 cups of vegetable broth or chicken broth

1 can (10.5 oz) of cream of mushroom soup

1½ cups of shredded cheddar cheese (divided)

1 cup of sour cream

1 small onion, finely chopped

2 cloves of garlic, minced

1 teaspoon of garlic powder

1 teaspoon of onion powder

½ teaspoon of black pepper

½ teaspoon of salt

¾ cup of breadcrumbs (optional, for topping)

2 tablespoons of olive oil or butter (for sautéing the onion and garlic)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté vegetables: In a large skillet, heat the olive oil or butter over medium heat. Add the chopped onion and minced garlic, and sauté for about 3-4 minutes until they are softened and fragrant.

      Prepare the Broccoli: If using fresh broccoli, blanch the florets in boiling water for 2-3 minutes, then drain and set aside. If using frozen, simply thaw and set aside.

        Combine Ingredients: In a large mixing bowl, combine the uncooked rice, vegetable (or chicken) broth, cream of mushroom soup, sour cream, sautéed onion and garlic, garlic powder, onion powder, black pepper, and salt. Mix well until all ingredients are evenly incorporated.

          Add Cheese and Broccoli: Fold in 1 cup of the shredded cheddar cheese and the broccoli florets into the mixture, ensuring everything is well distributed.

            Transfer to Baking Dish: Pour the cheesy broccoli and rice mixture into a greased 9x13 inch baking dish, spreading it out evenly.

              Add Topping: If desired, sprinkle breadcrumbs over the top for a crunchy texture. And for extra cheesiness, add the remaining ½ cup of shredded cheddar on top of the breadcrumbs.

                Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then remove the foil and bake for an additional 15 minutes, or until the casserole is bubbly and the top is golden brown.
