2 cups fresh broccoli florets, chopped

1 cup uncooked rice (white or brown)

2 cups vegetable or chicken broth

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup milk (whole or 2%)

1/2 cup cream of mushroom soup (or any cream soup)

1 clove garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

Salt and pepper to taste

1/2 teaspoon paprika (optional, for color)

1/2 cup breadcrumbs (for topping)

2 tablespoons butter, melted

Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.

    Prepare Rice: In a medium saucepan, bring the vegetable or chicken broth to a boil. Add the uncooked rice, stir once, then cover and lower the heat to a simmer. Cook according to package instructions until tender (about 15-20 minutes for white rice, longer for brown rice). Once done, remove from heat and set aside.

      Blanch Broccoli: While the rice is cooking, bring a small pot of water to boil. Add the broccoli florets and blanch for 2-3 minutes until vibrant green and slightly tender. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Drain again and set aside.

        Mix Ingredients: In a large bowl, combine cooked rice, blanched broccoli, milk, cream of mushroom soup, minced garlic, onion powder, garlic powder, and paprika. Stir well to combine. Add half of the cheddar and mozzarella cheeses, mixing until evenly distributed. Season with salt and pepper to taste.

          Transfer to Baking Dish: Pour the rice and broccoli mixture into the prepared baking dish, spreading it evenly.

            Top with Cheese: Sprinkle the remaining cheddar and mozzarella cheeses over the top of the casserole.

              Prepare Breadcrumb Topping: In a small bowl, mix the breadcrumbs with melted butter until coated. Sprinkle evenly over the cheese layer.
