Cheddar Bacon Mashed Potato Casserole

4 large russet potatoes (about 2 pounds), peeled and cubed

1/2 cup unsalted butter, divided

1 cup whole milk (or cream for richness)

1 cup shredded sharp cheddar cheese, plus extra for topping

1/2 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

8 slices of crispy bacon, crumbled

1 tablespoon finely chopped chives (optional, for garnish)

Boil the Potatoes: In a large pot, add the cubed potatoes and cover them with water. Add a pinch of salt. Bring to a boil over medium-high heat, then reduce the heat and simmer for about 15-20 minutes, or until the potatoes are fork-tender.

    Drain and Mash: Drain the potatoes well and return them to the pot. Add 1/4 cup of butter, milk (or cream), sour cream, garlic powder, onion powder, and a generous pinch of salt and pepper. Mash until smooth and creamy. Stir in the 1 cup of shredded cheddar cheese and crumbled bacon, reserving some bacon for garnish. Adjust seasoning if necessary.

      Prepare the Casserole: Preheat your oven to 350°F (175°C). Transfer the mashed potato mixture into a greased 9x13-inch baking dish. Spread evenly and smooth out the top with a spatula.

        Add Toppings: Melt the remaining 1/4 cup of butter and pour it evenly over the top of the mashed potatoes. Sprinkle additional cheddar cheese and the reserved bacon on top.
