Ingredients

8 oz elbow macaroni

2 cups shredded sharp cheddar cheese

1 cup crumbled goat cheese

½ cup grated Parmesan cheese

4 cups whole milk

¼ cup unsalted butter

¼ cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1 tsp mustard powder

Salt and pepper to taste

1 cup sliced salami

1 cup prosciutto slices

½ cup olives (green and black mixed)

½ cup roasted red peppers, sliced

Fresh herbs (like thyme or parsley) for garnish

Crackers and baguette slices for serving

Instructions

Cook the Macaroni: In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce: In the same pot over medium heat, melt the butter. Once melted, whisk in the flour to form a roux, cooking for about 2 minutes until golden. Gradually whisk in the milk to prevent lumps, continuing to whisk until it thickens (about 5-7 minutes).

Add the Cheese: Lower the heat and stir in the sharp cheddar, goat cheese, and Parmesan cheese. Mix until melted and smooth. Add garlic powder, onion powder, mustard powder, salt, and pepper to taste.

Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce, mixing until evenly coated. If the mixture is too thick, add a little more milk to reach your desired creaminess.

Add Charcuterie Ingredients: Gently fold in sliced salami, prosciutto, olives, and roasted red peppers into the macaroni and cheese mixture.

Bake (Optional): For a crunchy topping, transfer mac and cheese to a greased baking dish. Top with extra cheese if desired and bake in a preheated oven at 350°F (175°C) for 20-25 minutes or until bubbly and golden brown.

Serve: Transfer the mac and cheese to a serving platter. Garnish with fresh herbs. Surround with crackers and baguette slices for dipping and snacking.
