Cauliflower Buffalo Tacos

1 medium cauliflower head, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup water

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1 teaspoon black pepper

1 cup buffalo sauce (store-bought or homemade)

8 small corn or flour tortillas

1 cup shredded red cabbage

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Cauliflower:

    Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper. In a large bowl, whisk together flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Gradually add water, stirring until a thick batter forms.

      Coat the Cauliflower:

        Dip each cauliflower floret into the batter, ensuring it’s fully coated. Place the florets on the prepared baking sheet in a single layer, leaving some space between them.

          Bake the Cauliflower:

            Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.

              Buffalo Sauce Bath:

                Once the cauliflower is done baking, remove it from the oven and immediately toss it in the buffalo sauce until well coated.

                  Warm the Tortillas:

                    While the cauliflower is baking, warm the tortillas. You can do this in a dry skillet over medium heat for about 30 seconds on each side or wrap them in foil and place them in your oven for the last 5 minutes of cauliflower baking.

                      Assemble the Tacos:

                        Start by placing a generous portion of buffalo cauliflower on each tortilla. Top with shredded red cabbage and avocado slices.

                          Garnish and Serve:

                            Garnish with fresh cilantro and squeeze lime juice over the tacos for an added zing. Serve immediately and enjoy!
