Cajun Chicken Alfredo Skillet

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons Cajun seasoning

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

8 oz fettuccine pasta

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1 cup fresh spinach

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Season Chicken: In a medium bowl, toss the chicken pieces with Cajun seasoning until well coated. Set aside.

    Cook Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set aside.

      Sauté Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes or until golden brown and cooked through. Remove chicken from the skillet and set aside.

        Prepare Alfredo Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.

          Thicken Sauce: Reduce the heat to medium-low and stir in the Parmesan cheese, creating a creamy sauce. If the sauce is too thick, add a little reserved pasta water until you reach the desired consistency.

            Combine Ingredients: Add the cooked fettuccine, cherry tomatoes, spinach, and sautéed chicken back into the skillet. Toss everything together until well combined and heated through. Season with salt and pepper to taste.
