For the Meatballs:

1 pound ground turkey

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped green onions

1 egg, beaten

1 tablespoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

1/2 cup buffalo sauce (plus extra for drizzling)

For the Sub Boats:

4 hoagie rolls or French baguette

1 cup shredded mozzarella cheese

1/2 cup crumbled blue cheese (optional)

Fresh celery and carrot sticks for garnish

Chopped fresh parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Mix Meatball Ingredients: In a large bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, green onions, beaten egg, garlic powder, onion powder, salt, black pepper, smoked paprika, and buffalo sauce. Mix until fully combined but do not overmix to keep the meatballs tender.

      Form Meatballs: Shape the mixture into 1.5-inch meatballs and place them on a baking sheet lined with parchment paper.

        Bake Meatballs: Bake the turkey meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and have an internal temperature of 165°F (74°C). Halfway through baking, brush the meatballs with extra buffalo sauce for an added kick.

          Prepare the Sub Boats: While the meatballs are baking, prep the hoagie rolls by cutting them in half lengthwise. Hollow out the inside slightly to create a boat shape, removing some of the bread.

            Assemble the Sub Boats: Once the meatballs are done, remove them from the oven and reduce the temperature to 350°F (175°C). Place 3-4 meatballs in each hoagie roll and drizzle extra buffalo sauce on top. Sprinkle with shredded mozzarella cheese and blue cheese if using.

              Bake the Sub Boats: Place the assembled sub boats back in the oven for about 10-15 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Remove from the oven and garnish with chopped parsley, and serve with celery and carrot sticks on the side.
