Blueberry Cream Cheese Danish

1 sheet puff pastry (thawed)

8 oz cream cheese (softened)

1/3 cup powdered sugar

1 tsp vanilla extract

1 cup fresh blueberries (plus extra for garnish)

1 egg (beaten, for egg wash)

1 tbsp lemon juice

1 tbsp cornstarch

Zest of 1 lemon

Pinch of salt

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Cream Cheese Filling: In a medium bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Set aside.

      Combine the Blueberry Filling: In another bowl, combine the fresh blueberries, lemon juice, cornstarch, lemon zest, and a pinch of salt. Gently stir to coat the blueberries without mashing them.

        Roll Out the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet to smooth out any creases. Cut the pastry into four squares.

          Create the Danish Shape: Take each square and cut a smaller square (or diagonal cuts) from each corner without cutting all the way through, forming flaps that can be folded over.

            Assemble the Danish: Place a spoonful of the cream cheese mixture in the center of each pastry square, followed by a generous spoonful of the blueberry mixture.
