For the Oat Base:

1 ½ cups rolled oats

1 cup whole wheat flour

½ cup brown sugar, packed

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup coconut oil, melted (or unsalted butter)

¼ cup maple syrup

For the Berry Filling:

2 cups mixed berries (fresh or frozen, e.g., strawberries, blueberries, raspberries)

1 tablespoon cornstarch

2 tablespoons honey or agave syrup

1 teaspoon vanilla extract

Juice of ½ lemon

For Topping (optional):

¼ cup chopped nuts (almonds or walnuts)

Additional berries for garnish

Greek yogurt or plant-based yogurt for serving

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.

    Make the Oat Base: In a large mixing bowl, combine rolled oats, whole wheat flour, brown sugar, salt, and cinnamon. Stir in the melted coconut oil and maple syrup until everything is well combined and crumbly.

      Form the Cups: Press about 2 tablespoons of the oat mixture into the bottom and up the sides of each muffin cup, forming a small cup shape. Reserve some mixture for the topping.

        Prepare the Berry Filling: In a medium bowl, mix your desired berries with cornstarch, honey (or agave), vanilla extract, and lemon juice. Stir gently until the berries are coated.

          Assemble the Cups: Spoon the berry mixture evenly into each oat cup. Top with a sprinkle of the reserved oat mixture and chopped nuts (if using).

            Bake: Place the muffin tin in the preheated oven and bake for about 20-25 minutes, or until the oat topping is golden brown and the berries are bubbly.

              Cool and Serve: Allow the cups to cool in the muffin tin for 10 minutes before transferring them to a wire rack. Serve warm or at room temperature, topped with additional berries and a dollop of Greek yogurt, if desired.
